This beautiful weather is a great time for a picnic! These turkey pinwheels make the perfect lunch for a day out at any of Tennessee’s state parks or beaches.
This recipe takes 10 minutes, and makes 4 servings.
1. Lay out tortillas
2. Combine mayonnaise and mustard. Spread about ½ table-spoon on each tortilla.
3. Arrange slices of lettuce and lay them flat
4. Arrange cucumbers and red peppers evenly on each tortilla, and top with ½ ounce turkey .
5. Roll each tortilla into a log, and cut each log into four pieces with a sharp knife. Serve immediately, or refrigerate logs until ready to serve (cut prior to serving)
